  • 1 pound sausage Pork, chicken, or turkey depending on preference.
  • 2 large sweet potatoes Peeled and cubed.
  • ¼ cup honey For sweetness.
  • 4 cloves garlic Minced.
  • 2 tablespoons soy sauce Use low-sodium if preferred.
  • 1 tablespoon olive oil For roasting.
  • Salt and pepper To taste.

Preparation

  • Preheat your oven to 400°F (200°C). Meanwhile, peel and cube the sweet potatoes, then place them in a large bowl.
  • Drizzle the sweet potatoes with olive oil, and season with salt and pepper. Toss to coat evenly.

Roasting and Cooking

  • Spread the sweet potatoes in a single layer on a baking sheet. Roast in the oven for about 20 minutes, or until they’re tender and caramelized on the edges.
  • While the sweet potatoes are roasting, heat a skillet over medium-high heat. Add the sausage and cook until browned, about 7-10 minutes.
  • In a small bowl, mix together the honey, minced garlic, and soy sauce. Once the sausage is cooked through, pour the sauce over it, stirring well to combine.
  • Once the sweet potatoes are done roasting, add them to the skillet with the sausage. Toss everything together until nicely coated in sauce.
  • Serve warm, and drizzle with extra honey or sprinkle some fresh herbs for garnish.

Notes

For a healthier option, swap out the sausage for veggie sausage or use quinoa. You can substitute honey with maple syrup for a vegan twist. Store leftovers in an airtight container in the fridge for up to 3 days.
