  • 4 medium potatoes Yukon Gold or red potatoes recommended; sweet potatoes can be substituted.
  • 1 bell pepper Any color adds sweetness; mix colors for presentation.
  • 1 onion Yellow or white onions work well; shallots for milder taste.
  • 2 cloves garlic Fresh garlic preferred; garlic powder can work in a pinch.
  • 1 teaspoon paprika Smoked paprika can enhance flavor.
  • Salt and pepper Essential for seasoning; taste as you go.
  • 1 tablespoon olive oil Non-stick spray or butter can be used as substitutes.

Preparation

  • Dice the potatoes into bite-sized chunks, chop the onion and bell pepper, and mince the garlic.

Cooking

  • In a large skillet, heat olive oil over medium heat. Add the sausage and cook until browned, about 5-7 minutes.
  • Remove the sausage from the skillet and set aside. Sauté the onion and bell pepper in the same skillet until softened, about 5 minutes.
  • Add the chopped potatoes to the skillet, sprinkle with paprika, salt, and pepper, and stir well. Cover and cook for about 10 minutes, stirring occasionally.
  • Once the potatoes are tender, return the sausage to the skillet along with the minced garlic and cook for another 3-5 minutes.
  • Taste and adjust seasoning if necessary, then serve hot and enjoy.

Notes

For a lighter version, opt for turkey or chicken sausage. Seasonal vegetables like zucchini can be added for variety. Fresh herbs can be added before serving for enhanced flavor.
