  • 3 cloves garlic, minced Fresh garlic brings wonderful depth; garlic powder can be used in a pinch.
  • 1 can (14.5 oz) diced tomatoes Crushed tomatoes can create a thicker sauce.

  • salt and pepper, to taste Essential for bringing all the flavors together.
  • Fresh basil or parsley for garnish Adds freshness and color.

Cooking Steps

  • In a large pot of salted boiling water, cook the pasta until al dente according to package instructions. Reserve a cup of pasta water before draining.
  • In a large skillet over medium heat, add a splash of olive oil. Remove the sausage from its casing and crumble it into the skillet. Cook until browned (about 5-7 minutes), stirring frequently.
  • Toss in the sliced onion and bell peppers, cooking until they begin to soften (about 5 minutes).
  • Stir in the minced garlic and cook for 1-2 minutes until fragrant.
  • Add the diced tomatoes with their juices, stirring to combine. Let the mixture simmer for about 5 minutes.
  • Add the drained pasta to the skillet, tossing to mix thoroughly. If needed, add a splash of reserved pasta water to help the sauce cling to the noodles.
  • Season with salt and pepper to taste. Serve warm, garnished with fresh basil or parsley.

Notes

You can use zucchini or spinach to add more vegetables. A pinch of red pepper flakes can add spice, and freshly grated cheese is a delightful addition.
