Main Ingredients

  • 2-3 cups Mixed vegetables (bell peppers, broccoli, snap peas, carrots) Use whatever veggies you have on hand.
  • 3 cloves Garlic, minced Adds fragrance to the dish.
  • 1 tablespoon Ginger, minced A splash of warmth and zest.
  • 1/4 cup Soy Sauce Use low-sodium if preferred.
  • 2 tablespoons Sesame Oil Provides a nutty depth.
  • 1 tablespoon Cornstarch For thickening the sauce.
  • to taste Spring Onions, for garnish Adds freshness and color.

Preparation

  • Chop the vegetables into bite-sized pieces and prepare the garlic and ginger.

Making the Sauce

  • In a small bowl, whisk together soy sauce, sesame oil, and cornstarch until smooth. Set aside.

Cooking

  • Heat a drizzle of oil in a wide skillet or wok over medium-high heat.
  • Add the minced garlic and ginger and sauté for about 30 seconds until fragrant.
  • Toss in the vegetables and stir-fry for 5-7 minutes until crisp-tender.
  • Pour the prepared sauce over the veggies and stir to coat. Cook for another 2-3 minutes until the sauce thickens.
  • Remove from heat and garnish with chopped spring onions.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to a month. Reheat in a skillet or microwave before serving.
