Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a bowl, whisk together the flour, baking powder, and salt. Set aside.
  • In a large mixing bowl, cream together the softened butter and granulated sugar until the mixture is light and fluffy, about 3-5 minutes.
  • Add in the egg and both extracts, mixing until fully incorporated.
  • Gradually add the dry ingredients to the wet mixture, mixing until just combined. The dough should be soft but workable.
  • Divide the dough into two portions, shape each into a disk, wrap it in plastic, and refrigerate for at least 30 minutes.

Baking

  • Roll out the dough on a floured surface to about 1/8-inch thickness. Use cookie cutters to create fun shapes.
  • Place the cutouts on your prepared baking sheet and bake for 10-12 minutes, or until the edges are just lightly golden.
  • Remove from the oven, let cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.

Decoration

  • Decorate as desired with icing, sprinkles, or enjoy them plain!

Notes

Store cookies in an airtight container for up to one week. You can freeze dough for up to 3 months and baked cookies can be warmed slightly in the microwave if frozen.
