  • 1.5 pounds baby potatoes Leave them whole for extra fluffiness; feel free to swap with red potatoes.
  • 12 ounces kielbasa sausage Smoked varieties work best, but turkey kielbasa is a lighter option.

Seasoning

  • 2 tablespoons olive oil Can substitute with melted butter.
  • 1 teaspoon garlic powder Or fresh minced garlic for a bolder flavor.
  • 1 teaspoon paprika Smoked or sweet, depending on taste.
  • Salt and pepper To taste.

Garnish

  • Fresh herbs Such as parsley or thyme for garnish.

Preparation

  • Preheat your oven to 400°F (200°C).
  • Rinse the baby potatoes under cold water, pat them dry, and toss them in a bowl with olive oil, garlic powder, paprika, salt, and pepper.
  • Cut the kielbasa into half-moon shapes about 1-inch thick.

Cooking

  • On a large baking sheet, spread the seasoned potatoes and sliced kielbasa in a single layer.
  • Roast for about 30-35 minutes, tossing halfway through. It's done when the potatoes are golden brown and fork-tender.

Serving

  • Once out of the oven, sprinkle freshly chopped herbs over the top before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. To reheat, pop in a preheated oven at 350°F (175°C) for about 15 minutes.
