  • 4 slices slices of your favorite bread Sourdough or whole grain recommended
  • 2 cups shredded cheese A blend of sharp cheddar and creamy mozzarella
  • 1 whole head of garlic Roasted for sweetness
  • 1 tablespoon butter or olive oil For crispy crust

Preparation

  • Preheat your oven to 400°F (200°C). Slice the top off the head of garlic, drizzle with olive oil, and wrap it in foil. Roast for about 30-35 minutes until soft and caramelized.
  • While the garlic is roasting, butter one side of each slice of bread. For a heartier texture, you can spread a thin layer of olive oil instead.
  • Allow the garlic to cool slightly, then squeeze the roasted cloves out of their skins into a small bowl. Mash them with a fork until smooth.

Cooking

  • On the unbuttered side of two slices of bread, spread a generous layer of mashed garlic. Sprinkle a mix of your cheeses onto the garlic layer, then top with the other slices of bread, buttered side out.
  • Heat a skillet over medium heat. Once hot, place your sandwiches in the skillet. Cook for 2-4 minutes until the bread is golden and crispy, then flip and continue cooking until the cheese is melted.
  • Once the sandwiches are perfectly golden brown, remove them from the skillet. Let them cool for a minute before slicing in half—this allows the gooey cheese to settle just a bit.

Notes
