Ingredients
  

Chicken and Marinade

  • 1 pound chicken breast Fresh or thawed, cut into 1-inch cubes.
  • 1 cup ranch dressing Use your favorite store-bought or homemade version.
  • 1 tablespoon fresh garlic Minced; adjust quantity for garlic lovers.
  • 1/2 cup grated parmesan cheese Look for fresh-grated for best results.
  • 1 tablespoon olive oil To help baste the skewers.
  • 1 teaspoon black pepper For seasoning; adjust to taste.
  • to taste teaspoon salt Taste as you go based on ranch and parmesan saltiness.

Skewers

  • As needed Wooden or metal skewers Soak wooden skewers for 30 minutes before use.

Marinating and Preparing

  • In a large mixing bowl, combine the chicken cubes, ranch dressing, minced garlic, black pepper, and a pinch of salt. Ensure every piece is well-coated and let it marinate for at least 10 minutes.
  • If using wooden skewers, soak them in water to prevent burning.

Cooking

  • Slide the marinated chicken pieces onto the skewers, leaving a little space between them.
  • Preheat the grill over medium-high heat and brush with olive oil.
  • Place the skewers on the grill, cooking for about 4-5 minutes per side until cooked through.
  • In the last minute of cooking, sprinkle the grated parmesan on top of each skewer and close the grill lid.
  • Remove the skewers from the grill and let them rest for a few minutes before serving.

Notes

Add vegetables like bell peppers or zucchini on the skewers for a colorful twist. You can substitute the ranch dressing with blue cheese or an herb-infused dressing for different flavors. For heat, add red pepper flakes to the marinade.
