  • 2 cups cooked chicken (shredded or diced; rotisserie chicken makes a great substitute)
  • 1 can cream of chicken soup (10.5 oz) or a homemade version for a healthier option
  • 1 cup ranch dressing choose a low-fat variant for lighter calories
  • 2 cups frozen tater tots
  • 1 cup cheddar cheese (shredded) pepper jack can be used for a spicy kick
  • 1/2 cup sweet corn (drained, fresh or frozen)
  • 1/2 cup diced green onions for garnishing
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Preparation

  • Preheat your oven to 375°F (190°C). Grab a 9x13 inch baking dish and lightly grease it with cooking spray.
  • In a large mixing bowl, combine the cooked chicken, cream of chicken soup, ranch dressing, garlic powder, salt, and pepper. Stir until everything is well combined.
  • Spread the chicken mixture evenly in the greased baking dish. Layer the sweet corn on top of the chicken mixture.
  • Arrange the frozen tater tots over the top.
  • Sprinkle the shredded cheddar cheese generously over the tater tots.
  • Place the casserole in the preheated oven and bake for about 40 minutes or until the tater tots are golden brown and crispy.

Notes

Store any leftovers in an airtight container in the refrigerator for up to 3 days and reheat in the oven for best results. Consider using Greek yogurt instead of cream of chicken soup for added protein, turkey or vegetarian chicken for lower fat options, and sweet potato tater tots for extra vitamins.
