  • 1 cup ranch dressing Look for creamy version or Greek yogurt for a lighter option.
  • 1 cup shredded cheddar cheese Choose sharp cheddar for bolder taste or Monterey Jack for milder.
  • 4 strips bacon Cooked until crispy and crumbled.
  • 1 cup frozen mixed vegetables Peas, carrots, and corn are great; or use fresh veggies.
  • 1 cup cooked rice Adds heartiness; can swap with quinoa or cauliflower rice.
  • Salt and pepper To taste.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine the cooked chicken, ranch dressing, and half of the shredded cheese. Stir until everything is perfectly coated.
  • Fold in the frozen mixed vegetables and cooked rice into your chicken mixture.
  • Gently mix in the crumbled bacon.
  • Pour the mixture into a greased 9×13-inch baking dish, spreading it out evenly.
  • Sprinkle the remaining cheddar cheese over the top.

Baking

  • Place the casserole in the oven and bake for approximately 30 minutes or until the cheese is bubbly and lightly browned.
  • Allow it to cool for a few minutes, then serve.

Notes

You can add a splash of hot sauce for a spicy kick, or incorporate Italian seasoning for a different flavor. Consider topping with crispy fried onions or crushed tortilla chips.
