Ingredients

Main Ingredients

  • 1 pound beef sirloin (or tenderloin) Choose high-quality meat for tender bites.
  • 2 tablespoons olive oil Helps sear the beef, adding depth to the flavor.
  • 1 medium onion, finely chopped A classic base that sweetens when cooked.
  • 3 cloves garlic, minced Fresh garlic boosts the flavor profile.
  • 8 ounces mushrooms, sliced Earthy and savory, they add richness to the dish.
  • 1 cup beef broth Choose low-sodium for better control over seasoning.
  • 1 cup sour cream (or Greek yogurt for a healthier option) This adds creaminess; go for full-fat for the richest flavor.
  • 2 tablespoons flour For thickening the sauce; can be substituted with cornstarch for a gluten-free version.
  • Salt and pepper to taste Essential for bringing out the flavors.
  • Fresh parsley, chopped (optional) For a pop of color and freshness before serving.

Instructions

Cooking Steps

  • Heat olive oil in a large skillet over medium-high heat. Add the beef strips and sear until browned (around 3-4 minutes). Keep the beef moving to cook evenly.
  • Remove the beef from the skillet and set it aside. In the same skillet, add the chopped onion and mushrooms. Sauté until the onions become translucent and the mushrooms soften (about 5 minutes).
  • Stir in the minced garlic and cook for another minute until fragrant. Sprinkle in the flour, mixing well for about 1 minute.
  • Gradually pour in the beef broth, stirring constantly. Allow the sauce to thicken and become velvety.
  • Lower the heat and stir in the sour cream. Mix until everything is combined and the sauce is creamy.
  • Add the beef back to the skillet, season with salt and pepper, and let everything simmer for about 2-3 minutes.
  • Scoop generous portions over a bed of egg noodles or rice, and sprinkle with chopped parsley before serving.

Notes

Feel free to customize with substitutions like Greek yogurt for sour cream or using vegetables for a vegetarian version. Leftovers last in the fridge for up to three days.
