Preparation

  • In a large pot, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  • Add minced garlic, stirring until fragrant.

Cooking

  • Stir in the diced carrots, celery, and zucchini. Sauté for another 5 minutes.
  • Add the tomato paste, stirring it into the vegetables for a minute.
  • Add the canned diced tomatoes and the vegetable broth. Bring to a gentle boil, then reduce heat and simmer for about 10 minutes.
  • Add the canned beans and Italian seasoning. Continue simmering for an additional 5 minutes.
  • Stir in the fresh spinach or kale just before serving.
  • Season with salt and pepper to taste.

Notes

For a spicy twist, consider adding red pepper flakes or a dash of hot sauce. Fresh herbs can enhance the flavor; add those before serving. For heartier texture, small pasta shapes can be added during the last 10 minutes of cooking.
