Garlic Butter Shrimp and Rice

  • 1 pound Shrimp Sauté in butter with garlic
  • 2 tablespoons Butter For cooking shrimp
  • 2 cloves Garlic Minced
  • 1 pinch Chili flakes To taste
  • 1 tablespoon Lemon juice For finishing
  • 4 cups Microwavable rice Or quick cooking jasmine rice
  • 2 cups Spinach To wilt at the end

Sheet Pan Sausage and Veggies

  • 1 pound Smoked sausage Sliced
  • 2 cups Bell peppers Sliced
  • 1 cup Onions Sliced
  • 2 tablespoons Olive oil For tossing veggies
  • 1 teaspoon Italian seasoning For flavor
  • 1 to taste Salt and pepper

Egg Fried Rice

  • 2 cups Leftover rice
  • 2 large Eggs
  • 1 cup Frozen peas and carrots
  • 2 tablespoons Soy sauce
  • 1 teaspoon Sesame oil For extra flavor at the end

Instructions
 

Preparation

  • Start with garlic butter shrimp by sautéing shrimp in butter and garlic, seasoning with chili flakes and finishing with lemon juice.
  • For sheet pan sausage and veggies, toss sliced sausage with bell peppers, onions, olive oil, salt, pepper, and Italian seasoning. Bake at 425°F for about 20 minutes.
  • For egg fried rice, scramble eggs, add frozen veggies and leftover rice, mix in soy sauce and finish with sesame oil.
