  • 2 large russet potatoes for a fluffy texture.
  • 1 cup shredded cheese (cheddar or mozzarella) adds that ooey-gooey goodness.
  • 1/2 cup breadcrumbs for that extra crispy coating.
  • 1 large egg helps bind everything together.
  • 2 tablespoons fresh parsley (chopped) adds a touch of freshness.
  • Salt and pepper for seasoning.
  • Oil for frying choose a neutral oil, like vegetable or canola.

Preparation

  • Peel and cube the potatoes. Boil them in salted water until fork-tender, about 15 minutes.
  • Drain the potatoes, and while still warm, mash them in a large bowl. Add salt, pepper, and parsley for flavor.
  • Stir in the shredded cheese, mixing until well combined and gooey.
  • Using your hands, form small oval patties with about 2 tablespoons of the mixture for each croquette.

Frying

  • Whisk the egg in a shallow bowl. Place the breadcrumbs in another bowl. Dip each croquette in the egg wash and then coat it in breadcrumbs.
  • Heat oil in a deep skillet over medium heat. Once hot, carefully add the croquettes, frying in batches for about 3-4 minutes on each side or until golden brown.
  • Remove them from the oil and drain on paper towels.

Notes

Consider baking the croquettes instead of frying for a healthier version. Bake at 425°F (220°C) for about 20-25 minutes or until golden. You can add red pepper flakes for a spicy kick or consider adding grated pumpkin or sweet potato for a seasonal variation.
