  • 3.4 oz box instant vanilla pudding
  • 20 oz can crushed pineapple (do not drain) Do not drain the pineapple as the juice adds extra flavor.
  • 8 oz Cool Whip Use frozen whipped topping.
  • 2 cups mini marshmallows
  • 1 cup sweetened shredded coconut
  • 1/2 cup chopped nuts (pecans or walnuts)

Preparation

  • In a large mixing bowl, combine the vanilla pudding powder and the crushed pineapple. Remember, do not drain the pineapple.
  • Gently fold in the Cool Whip until well combined.
  • Add the mini marshmallows, shredded coconut, and chopped nuts, mixing thoroughly.
  • Cover the bowl with plastic wrap and refrigerate for 30 minutes before serving.

Notes

Pineapple Fluff can be made ahead of time and stored in the refrigerator for 3 to 5 days. Stir before serving to restore texture. You can customize by adding other fruits or switching up the pudding flavor.
