Preparation

  • Start by washing and chopping all the veggies, pineapple, and chicken.
  • In a large skillet or wok, heat the olive oil over medium-high heat until shimmering.

Cooking

  • Add the chicken breast pieces to the pan; let them sear for about 5-7 minutes until they’re golden brown and cooked through.
  • Toss in the garlic and ginger, stirring constantly for about 30 seconds, until fragrant.
  • Add the sliced bell peppers and onion to the pan and stir-fry for about 3-5 minutes until tender-crisp.
  • Gently fold in the diced pineapple and soy sauce. Cook for another 2-3 minutes, letting the flavors mingle.
  • Remove from heat, garnish with green onions and sesame seeds if using.

Notes
