Main Ingredients

  • 1 cup creamy peanut butter Choose natural peanut butter for a healthier option without added sugars.
  • 1 cup granulated sugar You can substitute with coconut sugar for a lower glycemic index.
  • 1 large egg This binds the ingredients. A flaxseed egg also works wonderfully for an egg-free version.
  • 1 teaspoon baking powder Gives your cookies that perfect lift.
  • 1 teaspoon vanilla extract Adds a lovely depth of flavor; consider using homemade if available.
  • a pinch salt Balances the sweetness of the cookies.

Instructions

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine the peanut butter and sugar until well blended.
  • Incorporate the egg and vanilla extract, mixing until fully combined.
  • Sprinkle in the baking powder and a pinch of salt, mixing gently.
  • Using a spoon or a small cookie scoop, form small balls of dough and place them on a lined baking sheet.
  • With a fork, gently press down on each dough ball to create a crisscross pattern.
  • Place the baking sheet in the preheated oven and bake for 10-12 minutes.
  • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.

Notes

Store leftover cookies in an airtight container at room temperature for up to one week. For longer storage, freeze them as soon as they cool completely.
