Pancetta

Preparation

  • Bring a large pot of salted water to a boil, add your pasta and cook until al dente. Reserve about 1 cup of pasta water before draining it.
  • Heat a large skillet over medium heat. Add the pancetta and cook, stirring occasionally, until crispy and golden.

Create the Sauce

  • In a bowl, whisk together the eggs and grated cheese until well combined, then season with black pepper.
  • Once the pasta is cooked and drained, immediately add it to the skillet with the crispy pancetta. Remove from heat.
  • Quickly pour the egg and cheese mixture over the hot pasta. Stir vigorously to cook the eggs slightly and form a creamy sauce.

Serving

  • Plate your carbonara and garnish with extra cheese and freshly cracked black pepper.
