  • to drizzle Olive oil for drizzling; you can substitute with avocado oil for a healthier option

Preparation

  • Preheat your oven to 400°F (200°C).
  • Pat the chicken breasts dry with paper towels.
  • In one bowl, whisk the eggs with a pinch of salt and pepper.
  • In another bowl, mix the breadcrumbs, grated Parmesan, garlic powder, onion powder, and a hint more salt and pepper.
  • Dip each chicken breast into the egg mixture, then dredge it in the breadcrumb mixture, pressing down to ensure it adheres well.
  • Place the coated chicken on a lined baking sheet and drizzle with olive oil.
  • Bake in the preheated oven for about 20 minutes or until golden brown and cooked through.
  • Let the chicken rest for a few minutes before serving.

Notes

For healthier options, swap whole wheat breadcrumbs or half the Parmesan with nutritional yeast. Add lemon zest or Italian herbs for a fresh touch, or cayenne pepper for a spicy kick.
