  • 2 teaspoons dried oregano Adds authentic pizza flavor; can experiment with Italian seasoning.

Preparation

  • Preheat your oven to 425°F (220°C).
  • Chop the cauliflower into florets and steam until tender (about 5–7 minutes).
  • Drain and cool the cauliflower, squeezing out as much moisture as possible with a towel.
  • In a large bowl, combine the drained cauliflower, egg, mozzarella cheese, almond flour, oregano, salt, and pepper.
  • Scoop tablespoon-sized portions onto a parchment-lined baking sheet, shaping them into small rounds or flat circles.

Baking

  • Bake in the preheated oven for 10 minutes, then flip and bake for another 5 minutes until golden.
  • Add desired toppings, and return to bake for an additional 3–5 minutes until cheese is melted.
  • Let them cool slightly before serving.

Notes

Squeezing out moisture is crucial for crispy bites. Customize size and toppings as desired. Can be frozen for later use.
