For the Tacos

  • 2 cups cooked chicken, shredded You can use rotisserie chicken for convenience!
  • ½ cup buffalo sauce Adjust the heat to your preference.
  • 1 cup shredded cheddar cheese Feel free to substitute with a dairy-free option.
  • 8 small tortillas Corn or flour; your choice!
  • 1 cup lettuce, chopped For a fresh crunch.
  • ½ cup ranch or blue cheese dressing Optional, but highly recommended for extra flavor!

Instructions
 

Preparation

  • Start by preheating your oven to 350°F (175°C).
  • In a mixing bowl, combine the shredded chicken with the buffalo sauce. Stir well to coat the chicken.
  • Lay out your tortillas and fill each with the buffalo chicken mixture. Sprinkle cheese on top.
  • Carefully fold each tortilla closed, seam-side down on a baking dish.

Baking

  • Place the dish in the oven and bake for 15-20 minutes, or until the tortillas are crispy and the cheese is melted.

Serving

  • Once baked, allow to cool slightly. Top with chopped lettuce and drizzle with ranch or blue cheese dressing before serving.

Notes

For healthier options, consider using Greek yogurt instead of ranch or whole wheat tortillas. Try adding seasonal veggies for extra flavor and texture.
