  • 12 ounces favorite pasta (penne, rotini, or gluten-free options)
  • 24 ounces marinara sauce (store-bought or homemade)
  • 3 cups water or broth (vegetable or chicken broth adds deeper flavor)
  • 1 cup sliced pepperoni or Italian sausage (optional for a meatier dish)
  • 1 cup shredded mozzarella cheese (substitute with dairy-free cheese if needed)
  • 1 cup bell peppers or mushrooms, diced
  • 1 teaspoon Italian seasoning
  • salt and pepper to taste
  • 1 tablespoon olive oil (for sautéing)

Preparation

  • Heat the olive oil in a large pot over medium heat.
  • Add the diced vegetables and sauté for 3-4 minutes until they soften.
  • Pour in the pasta, marinara sauce, and water (or broth).
  • Add your Italian seasoning, salt, and pepper. Stir gently to combine.
  • Bring the mixture to a simmer, then cover the pot.
  • Cook for about 10 minutes, stirring occasionally, until the pasta is al dente and the sauce is rich and creamy.
  • If desired, toss in the pepperoni or sausage during the last 2 minutes of cooking to heat through.
  • Sprinkle the shredded mozzarella cheese on top, cover again, and let sit for 2-3 minutes until the cheese melts.
  • Serve hot, garnished with fresh basil if you like.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat with a splash of water or broth. This dish also freezes well for up to a month.
