Ingredients
  

Pasta and Bacon

  • 8 oz 8 oz. pasta (penne or fusilli work best)
  • 4 slices 4 slices of bacon (or turkey bacon for a lighter option) Feel free to use turkey bacon for a lighter option.

Vegetables and Broth

  • 1 cup 1 cup frozen peas Fresh peas are fantastic too, if available.
  • 2 cups 2 cups low-sodium chicken broth For a vegetarian version, substitute with vegetable broth.

Cream and Cheese

  • 1 cup 1 cup heavy cream Can substitute with half-and-half or a dairy-free alternative.
  • 1 cup 1 cup grated Parmesan cheese A must for a creamy, cheesy finish.

Seasoning

  • Salt and pepper, to taste
  • Fresh parsley for garnish (optional) Adds a lovely brightness.

Instructions
 

Cooking the Bacon

  • In a large pot over medium heat, add the bacon slices. Cook until crispy, about 5-7 minutes.

Preparing the Pasta

  • Transfer the cooked bacon to a paper towel-lined plate, leaving the rendered fat in the pot. Crumble the bacon into small pieces when cool.
  • Add the dry pasta to the bacon fat in the pot and stir for about 2-3 minutes until slightly toasted.

Cooking with Broth and Peas

  • Pour in the chicken broth and bring to a gentle boil. Add the frozen peas and a pinch of salt and pepper.
  • Cook for about 10-12 minutes until the pasta is al dente and has absorbed most of the liquid.

Finishing Touches

  • Lower the heat and stir in the heavy cream and grated Parmesan until creamy. Fold in the crumbled bacon.
  • Ladle the pasta into bowls, sprinkle with parsley, and enjoy immediately.

Notes

For a lighter version, substitute whole wheat pasta or zucchini noodles. Incorporate extra veggies like spinach or kale, or add Italian sausage or pancetta for a regional spin.
