  • 1 pound kielbasa, sliced Can substitute with turkey kielbasa for a healthier option.
  • 4 medium Yukon gold potatoes, diced Or use sweet potatoes for a sweet twist.
  • 1 medium onion, chopped Onions are the backbone of aroma.
  • 2 cloves garlic, minced Fresh garlic infuses a wonderful depth.
  • 1 cup green bell pepper, chopped Or use red peppers for a sweeter flavor.
  • 1 cup chicken broth Vegetable broth can also work.
  • 2 tablespoons olive oil Or butter for a richer flavor.
  • Salt and pepper to taste
  • Fresh parsley, chopped, for garnish A touch of freshness at the end!

Preparation

  • In a large pot, heat the olive oil over medium heat until shimmering.
  • Add the sliced kielbasa and sauté for about 5 minutes until it’s beautifully browned.
  • Toss in the chopped onion and minced garlic, cooking until the onions become translucent, about 3–4 minutes.
  • Introduce the diced potatoes and bell pepper to the pot, mixing well.
  • Add the chicken broth, stirring everything together. Season with salt and pepper to taste. Bring it to a gentle simmer.
  • Cover the pot and let it cook for about 20 minutes, or until the potatoes are fork-tender.
  • Once ready, give it a final taste. Adjust seasoning if necessary and sprinkle fresh parsley on top.

Notes

This dish is great for leftovers; store in an airtight container in the fridge for up to 3 days or freeze for up to 2 months. Reheat gently on the stove with a splash of broth or water.
