One Pot French Onion Pasta

A comforting and rich pasta dish that combines the flavors of caramelized onions and Parmesan cheese, reminiscent of classic French onion soup.

Ingredients
  

Pasta and Broth

  • 12 oz pasta (penne or rotini) Whole wheat or gluten-free pasta works.
  • 4 cups beef or vegetable broth Chicken broth is a good alternative.

Vegetables and Condiments

  • 2 large sweet onions Thinly sliced. Yellow onions can be used as a substitute.
  • 4 cloves garlic Minced. Garlic powder can be used if needed.
  • 4 tablespoons butter Olive oil can be used for a dairy-free option.
  • 1 teaspoon dried thyme Fresh herbs can enhance the flavor.
  • 1 leaf bay leaf
  • to taste salt
  • to taste pepper Fresh cracked pepper recommended.

Cheese

  • ½ cup grated Parmesan cheese Nutritional yeast is a great vegan substitute.

Instructions
 

Preparation

  • In a large pot over medium heat, melt the butter.
  • Add the sliced onions and a pinch of salt. Cook until soft and caramelized, about 15 minutes, stirring occasionally.
  • Once caramelized, add the minced garlic and cook for another 1-2 minutes.
  • Pour in the beef or vegetable broth, scraping any bits off the bottom of the pot.
  • Add the thyme, bay leaf, salt, and pepper. Bring the mixture to a boil.
  • Stir in the pasta, ensuring it is submerged. Reduce heat to low and cover the pot.

Cooking

  • Cook for about 10-15 minutes until the pasta is al dente, stirring occasionally.
  • Once cooked, remove the bay leaf and stir in the grated Parmesan cheese until melted and creamy.
  • Taste and adjust seasonings if necessary.
  • Garnish with fresh parsley if desired and serve immediately.

Notes

Leftovers can be stored in an airtight container for up to 3 days. For longer storage, freeze in portions for up to 2 months. Reheat by warming on the stove with a splash of broth or water.
