  • 10-12 ounces Fettuccine or penne pasta
  • 3-4 cloves Garlic, minced
  • 3 cups Chicken broth Best flavor if using homemade or low-sodium.
  • 1 cup Cream or half and half Can substitute with milk for a lighter option.
  • 1 cup Parmesan cheese, grated Freshly grated is recommended for better melting.
  • to taste Salt and pepper
  • 1 tablespoon Butter or olive oil For sautéing the chicken.

Cooking

  • Heat butter or olive oil in a large pot over medium heat.
  • Add the chicken, season with salt and pepper, and cook until brown on the outside.
  • Add minced garlic and cook for 30 seconds until fragrant.
  • Stir in the pasta and chicken broth, bringing it to a gentle boil.
  • Reduce heat to a simmer, stirring occasionally, until pasta is nearly tender.
  • Pour in the cream, letting it bubble gently for a couple of minutes.
  • Turn off the heat, then add grated Parmesan and stir until melted and creamy.

Notes

If the sauce gets too thick, add a splash of broth. If it's too thin, let it sit for a few minutes to thicken.
