Cooking Steps

  • In a large pot, heat a drizzle of olive oil over medium-high heat. Season the beef with salt and pepper. Add the beef to the pot, cooking until browned all over (about 3-4 minutes). Remove the beef and set it aside.
  • In the same pot, add the chopped onion and mushrooms. Sauté for about 5 minutes or until the onions are translucent and the mushrooms are tender.
  • Toss in the minced garlic and sauté until fragrant.
  • Pour in the beef broth, scraping the bottom of the pot to release any bits, and bring it to a gentle simmer.
  • Stir in the egg noodles and cook according to package instructions, about 8 minutes until tender.
  • Reduce heat to low and stir in the sour cream until well combined. Return the beef to the pot, letting it warm through. Adjust seasoning if necessary.
  • Serve once heated through and creamy.

Notes

Leftovers can be stored in an airtight container for up to 3 days. For longer storage, freeze in individual portions.
