  • 8 oz fettuccine Traditional pasta, but feel free to use penne or even whole wheat for a healthier option.
  • 1 lb boneless, skinless chicken breasts Tender and juicy, chicken thighs can also be used for added flavor.
  • 2 tbsp olive oil For sautéing the chicken; avocado oil is a great substitute.
  • 3 cloves garlic, minced Fresh garlic gives depth to the sauce; no one likes the jarred stuff!
  • 2 cups chicken broth Use low-sodium for a healthier option or vegetable broth for a vegetarian twist.
  • 1 cup heavy cream This creates the luscious sauce; opt for Greek yogurt if you’re looking for a lighter rendition.
  • 1 cup freshly grated Parmesan cheese Always choose fresh over pre-grated for maximum flavor and creaminess.
  • Salt and pepper to taste Essential for enhancing all the flavors; don’t skip it!

Preparation

  • Season the chicken breasts with salt and pepper.

Cooking

  • In a large pot over medium heat, add olive oil. Once hot, add the chicken and cook for about 6-7 minutes, until golden and fully cooked. Remove the chicken from the pot and set it aside to rest.
  • In the same pot, add minced garlic and sauté for about 30 seconds until fragrant.
  • Pour in the chicken broth and add the fettuccine. Bring to a boil, then reduce the heat and simmer for about 12 minutes, stirring occasionally.
  • Once the pasta is al dente, stir in the heavy cream and bring it back to a gentle simmer. Stir in the Parmesan cheese until the sauce thickens.
  • Slice the chicken into bite-sized pieces and mix it back into the pasta. Let it heat through for a minute.
  • Garnish with fresh parsley or additional Parmesan, if desired. Serve warm.

Notes

Store leftovers in an airtight container in the fridge for up to three days. To reheat, gently warm in a saucepan over low heat, adding a splash of chicken broth or cream to keep it creamy.
