  • 2 cups low-sodium chicken or vegetable broth This is vital for cooking the pasta to tender perfection.
  • 1 cup corn, frozen or canned For a pop of sweetness and color.
  • 1 cup shredded cheese (cheddar or Mexican blend) Use a bit more if you’re feeling indulgent!

Preparation

  • In a large pot over medium heat, add a splash of oil and toss in the diced onion. Cook for about 2-3 minutes until translucent.
  • Add the minced garlic and sauté until fragrant, about 1 minute.
  • Add the ground beef or turkey to the pot. Break it apart with a spatula, seasoning with salt and pepper. Cook until browned, about 5-7 minutes.
  • Sprinkle in the taco seasoning, stirring to combine.
  • Add the diced tomatoes (with juices), broth, corn, and pasta to the pot. Give it a good stir.
  • Increase the heat to bring the mixture to a gentle boil. Once boiling, reduce the heat to a simmer, cover the pot, and let it cook for about 10 minutes or until the pasta is al dente.
  • Remove the pot from heat and stir in the shredded cheese until melted and creamy.
  • Garnish with your choice of toppings, and enjoy warm.
