One Pot Cheeseburger Casserole

Ingredients
  

Main Ingredients

  • 1 pound ground beef (or ground turkey or plant-based protein) Substitute for a healthier option.
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 cups pasta (elbow or fusilli work best)
  • 4 cups beef broth (or vegetable broth for a vegetarian version)
  • 1 cup shredded cheddar cheese Mix in mozzarella or pepper jack for variation.
  • 1 can diced tomatoes (14.5 oz, preferably with green chilies)
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon mustard
  • to taste Salt and pepper
  • Chopped pickles (for garnish, optional)
  • Chopped green onions (for garnish, optional)

Instructions
 

Preparation

  • In a large pot over medium heat, add the ground beef and chopped onion. Cook until the meat is browned and the onion is translucent, about 5-7 minutes. Drain excess fat for a lighter dish.
  • Add the minced garlic to the pot and cook for an additional 1-2 minutes until fragrant.
  • Stir in the uncooked pasta, diced tomatoes (with juices), beef broth, Worcestershire sauce, mustard, salt, and pepper. Stir well to combine all ingredients evenly, ensuring the pasta is submerged in the broth.

Cooking

  • Bring the mixture to a boil, then reduce heat to low. Cover and simmer for 20-25 minutes, stirring occasionally, until the pasta is cooked al dente and the liquid is mostly absorbed.
  • Once the pasta is done, remove from heat and stir in the shredded cheddar cheese until melted and gooey. You can reserve some cheese for the top if you like a cheesy layer.

Serving

  • Garnish with chopped pickles and green onions before serving. Dish out the casserole into bowls and enjoy.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 3 months. Reheat with a splash of broth to keep it moist.
