  • 3 medium potatoes, diced Yukon gold or red potatoes hold their shape well.
  • 1 large onion, chopped Fresh garlic can be added for extra depth.
  • 3 cloves garlic, minced Garlic powder can work in a pinch.
  • 4 cups beef broth Homemade broth adds an extra layer of flavor.
  • 2 tablespoons tomato paste For richness; can swap with a bit of ketchup.
  • 1 tablespoon Worcestershire sauce This adds a savory umami kick.
  • Salt and pepper, to taste
  • Olive oil, for browning meat
  • Fresh parsley, for garnish (optional) Brightens the stew beautifully.

Cooking Instructions

  • In a large pot, heat 2 tablespoons of olive oil over medium-high heat. Season the beef with salt and pepper. Brown half the beef in batches, ensuring each piece has a deep caramelized crust.
  • Once all the beef is browned and set aside, add a little more olive oil if needed and toss in the onions. Cook for about 5 minutes until softened, then add the garlic and sauté for another minute.
  • Add the chopped carrots and potatoes to the pot. Stir for a couple of minutes to coat them with the fragrant mixture.
  • Return the beef to the pot, and add the tomato paste and Worcestershire sauce. Stir to mix everything well.
  • Slowly pour in the beef broth, then add the bay leaves. Bring to a simmer and let the magic begin.
  • Reduce the heat to low, cover the pot, and let it simmer for about 1 hour. Open the lid occasionally to stir and check on the progress.
  • After the hour, taste and adjust the seasoning as needed. Remove the bay leaves, sprinkle fresh parsley for a pop of color, and prepare for the happiest dinner table.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days and frozen for up to 3 months. Reheat gently on the stove or in the microwave.
