  • In a large skillet, heat the olive oil over medium heat. Add minced garlic and season with salt and pepper. Sauté for about 1 minute, until fragrant.
  • Stir in the orzo pasta, allowing it to toast slightly for another minute.
  • Pour in the vegetable or chicken broth, bringing the mixture to a gentle boil, then decrease the heat to low and cover, letting it simmer for 10-12 minutes or until the orzo is al dente.
  • Gently fold in the shrimp and spinach, covering again for about 5 minutes until the shrimp turn pink and opaque.
  • Remove from heat and stir in the grated parmesan cheese, allowing it to melt and create a creamy consistency.

Notes

For healthier swaps, replace orzo with quinoa or cauliflower rice. Add chopped bell peppers or zucchini for extra nutrition. A splash of lemon juice at the end enhances the flavors.
