  • In a large pot, melt 2 tablespoons of butter over medium heat.
  • Add diced onions, carrots, and celery. Sauté until they’re soft—about 5 minutes.
  • Stir in 1/4 cup of flour, cooking for another minute.
  • Gradually whisk in 4 cups of chicken broth and let it simmer.
  • Toss in 2 cups of shredded chicken and bring the mixture to a gentle boil.
  • Add 1 package of gnocchi and cook until they float, usually takes about 2-3 minutes.
  • Stir in 1 cup of fresh spinach and 1 cup of heavy cream. Season with salt and pepper.
  • Let the soup simmer for a couple more minutes to infuse all the flavors together.

Notes
