Preparation

  • In a large pot, heat olive oil over medium heat.
  • Add the diced onions, carrots, and celery, sautéing until softened—around 5-7 minutes.
  • Stir in minced garlic and sauté for another minute.
  • Add the chicken broth and bring it to a gentle simmer.
  • Add the diced chicken breast, cooking until it’s no longer pink—about 10 minutes.
  • Toss in the gnocchi, Italian seasoning, salt, and pepper. Cook for 5 minutes, or until the gnocchi floats to the surface.
  • Reduce heat to low and pour in the heavy cream. Stir in the fresh spinach until wilted.
  • Taste and adjust seasonings as needed, then ladle the soup into bowls.

Notes

For a creamier texture, ensure the soup is simmering before adding the cream. Leftovers can be refrigerated for up to 3 days or frozen for longer storage, reheating as needed.
