  • 4 pieces boneless, skinless chicken breasts

  • 2 tablespoons olive oil
  • 4 cloves garlic, minced Feel free to use less if you’re not a garlic fan
  • 1 cup heavy cream Can substitute with coconut cream for a dairy-free option
  • 1 cup fresh basil leaves, chopped
  • 1 cup shredded mozzarella cheese Try using vegan cheese for a plant-based twist
  • 1 teaspoon Italian seasoning
  • 1 tablespoon lemon juice To brighten the flavors

Preparation

  • Season the chicken breasts with salt and pepper on both sides.

Cooking

  • In a large skillet, heat olive oil over medium-high heat. Once hot, add the chicken breasts and cook for 5-7 minutes on each side, or until the internal temperature reaches 165°F.
  • Remove the chicken and set it aside. In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant.
  • Pour in the heavy cream, stirring in the Italian seasoning and lemon juice. Bring it to a gentle simmer.
  • Stir in the chopped basil and half of the mozzarella cheese, letting it melt.
  • Nestle the chicken back into the skillet and sprinkle the remaining mozzarella on top. Cover and cook for an additional 5 minutes on low heat.

Notes

Consider adding vegetables like spinach or sun-dried tomatoes for extra nutrition. For a lighter option, substitute heavy cream with Greek yogurt. Taste as you go and adjust the seasoning as needed.
