Ingredients

Main Ingredients

  • 1 pound ground beef Opt for lean beef for a healthier option, or substitute with ground turkey if preferred.
  • 8 ounces flat rice noodles These noodles have a lovely texture. You can use egg noodles or gluten-free noodles.
  • 1 medium onion, sliced A sweet onion adds depth; feel free to switch to shallots for a milder flavor.
  • 2 cloves garlic, minced Freshly minced garlic elevates flavor significantly.
  • 1 cup bell peppers, sliced A mix of red and yellow adds a pop of color and sweetness.
  • 2 tablespoons soy sauce Use low-sodium soy sauce to reduce sodium intake.
  • 1 tablespoon oyster sauce This adds a unique umami flavor—swap with hoisin sauce if preferred.
  • 1 tablespoon brown sugar Balances the savory flavors; you can use honey as a substitute.
  • Salt and pepper to taste
  • 2 green onions, chopped For garnish and added flavor.

Instructions

Preparation

  • Start by preparing all your ingredients. Slice the onion and bell peppers, mince the garlic, and chop the green onions.

Cooking Noodles

  • In a large pot, boil water and cook the rice noodles according to package instructions until al dente. Drain and set them aside, adding a splash of oil to prevent sticking.

Sautéing the Beef

  • In a large skillet over medium-high heat, add the ground beef. Cook until browned, breaking it apart with a spatula, which should take about 5-7 minutes.
  • Drain excess fat if necessary.

Adding Aromatics and Vegetables

  • To the browned beef, add the sliced onion, minced garlic, and bell peppers. Sauté for another 5 minutes until the vegetables are tender yet vibrant.

Combining Ingredients

  • Stir in the soy sauce, oyster sauce, brown sugar, salt, and pepper, mixing thoroughly.
  • Add the drained noodles, tossing everything to ensure the noodles are evenly coated in the sauce.

Serving

  • Remove from heat and transfer to a serving plate. Garnish with chopped green onions and enjoy your delicious Mongolian Ground Beef Noodles!

Notes

Consider health alternatives such as using ground chicken or lentils for a plant-based option, or whole grain noodles for additional fiber. Increase the vegetable content by adding spinach or broccoli.
