Ingredients
  

Cake Ingredients

  • 1/2 cup butter Room temperature
  • 1 cup white sugar
  • 2 large eggs Room temperature
  • 1 tsp vanilla extract
  • 1 can crushed pineapple (14 oz) Drained well, set juice aside
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt

Glaze Ingredients

  • 4 tbsp pineapple juice
  • 2 tbsp powdered sugar Adjust thickness with more powdered sugar if necessary

Preparation

  • Preheat your oven to 350 degrees F (175 degrees C). Line a loaf pan with parchment paper and set aside.
  • In a large bowl, cream together the butter and sugar using an electric mixer.
  • Add in the eggs, one at a time, mixing until smooth. Follow with the vanilla extract.
  • Stir in the drained crushed pineapple, mixing well.
  • In a separate bowl, whisk together flour, baking soda, and salt.
  • Gradually add the dry mix into the pineapple mixture until combined.
  • Pour the batter into the prepared loaf pan. Bake for 1 hour or until golden and a toothpick comes out clean.

Glaze Preparation

  • Meanwhile, mix the pineapple juice and powdered sugar to create the glaze.
  • Remove the cake from the oven, drizzle with glaze, and cool for 15 minutes in the pan.
  • Transfer to a wire rack to cool completely for at least 1 hour before serving.

Notes

Serve plain, or add whipped cream or vanilla ice cream. Can be garnished with fresh pineapple slices or shredded coconut.
