Ingredients
  

For the Rolls

  • 12 pieces small dinner rolls or slider buns Soft, slightly sweet rolls work beautifully.

For the Filling

  • 1 pound shrimp, peeled, deveined, and roughly chopped Medium-size is perfect for texture.
  • 2 tablespoons unsalted butter Melts into the rolls for a golden finish.
  • 2 tablespoons olive oil Helps sauté the shrimp and aromatics.
  • 1 small shallot or 1/4 cup red onion, finely chopped Adds a gentle, sweet bite.
  • 2 cloves garlic, minced Fragrant and warming.
  • 1 stalk celery, finely diced Adds crunch and classic shrimp-roll texture.
  • 1/3 cup mayonnaise Or Greek yogurt for a lighter option.
  • 1 tablespoon lemon juice Brightens the filling.
  • 1 teaspoon Dijon mustard Adds depth and subtle tang.
  • 1/4 cup fresh parsley or chives, chopped Herbal freshness.
  • to taste Salt and freshly ground black pepper
  • pinch smoked paprika or Old Bay seasoning (optional) For nostalgic seafood flavor.

Instructions
 

Preparation

  • If using raw shrimp, pat them dry and roughly chop into bite-sized pieces. If using pre-cooked shrimp, chop and proceed.
  • In a skillet over medium heat, warm the olive oil. Add the shallot and celery and cook until softened, about 3 minutes.
  • Add the garlic and sauté for 30 seconds until fragrant.
  • Add the chopped shrimp to the skillet, season with salt, pepper, and smoked paprika or Old Bay if using. Cook for 2 to 3 minutes until shrimp are opaque and just cooked through. Remove from heat and let cool slightly.
  • In a bowl, whisk together mayonnaise, lemon juice, Dijon mustard, and chopped herbs. Taste and adjust seasoning.
  • Toss the cooled shrimp mixture with the dressing until evenly coated.

Assembly

  • Slice the rolls horizontally, leaving one side intact if you like a hinged presentation. Butter the insides lightly.
  • Spoon a generous portion of shrimp filling into each roll.
  • Arrange on a baking sheet and, if desired, toast in a 350°F oven for 5 minutes.
  • Garnish with extra chopped herbs and a lemon wedge. Serve immediately.

Notes

Consider adding sriracha for spice or using Greek yogurt for a healthier filling. For festive presentations, use mini brioche buns.
