  • 1 can cream of chicken soup Feel free to use homemade or substitute with cream of mushroom soup for a twist.
  • 1 cup sour cream You can swap Greek yogurt if you’re looking for a healthier option.
  • 1 cup shredded cheddar cheese Sharp cheddar adds great flavor; you can use mozzarella for a milder taste.
  • 1 cup crushed buttery crackers These provide a delightful crunch; you can also use panko breadcrumbs for a different texture.
  • 1 tablespoon fresh parsley, chopped Optional but adds freshness.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, combine the shredded chicken, cream of chicken soup, and sour cream.
  • Gently fold in ¾ cup of the cheddar cheese.
  • Pour the chicken mixture into a greased 9×13-inch baking dish, spreading it evenly.
  • In a small bowl, combine the crushed crackers and remaining cheddar cheese, and sprinkle evenly over the chicken layer.
  • Place the casserole in the preheated oven and bake for about 25 minutes.
  • Once bubbly and golden, remove it from the oven and let it rest for a few minutes before serving.

Notes

Store any leftovers in an airtight container in the refrigerator for up to 3-4 days. You can also freeze portions for up to 3 months. To reheat, place it in a preheated oven at 350°F (175°C) for 20 minutes.
