Ingredients
  

Fresh Vegetables

  • 1 small head green cabbage, finely shredded Can substitute with red cabbage for color.
  • 1 large carrot, grated Zucchini can be used for a different texture.
  • 1 piece bell pepper, diced Any color works; radishes can be a substitute.
  • ½ cup cherry tomatoes, halved Can swap for diced cucumbers.

Fresh Herbs

  • 1 cup fresh parsley, chopped Basil or mint can add a twist.
  • ½ cup fresh mint, finely chopped Dried mint works but use less.

Dressings and Seasonings

  • ½ cup olive oil Avocado oil is a nice alternative.
  • 2 pieces lemons, juiced Lime can also be used.
  • to taste salt and pepper Essentials for balancing flavors.

Instructions
 

Preparation

  • Finely shred the cabbage and place it in a large mixing bowl.
  • Grate the carrot and add it to the bowl.
  • Dice the bell pepper and toss it into the bowl.
  • Chop the fresh parsley and mint, then add to the bowl.
  • Halve the cherry tomatoes and mix them in.
  • In a small bowl, whisk together the olive oil and lemon juice, then drizzle over the salad mixture.
  • Season with salt and pepper, then toss gently.
  • Let the salad sit for 5-10 minutes before serving to meld flavors.

Notes

For variations, consider adding protein like chickpeas or grilled chicken, nuts for crunch, or seasonal fruits for a festive twist. Keep the dressing separate for meal prep.
