  • 1 lb ground beef Substitutes: turkey, chicken
  • 1 small onion, diced For sweetness
  • 2 cloves garlic, minced For aroma
  • 1 medium bell pepper, diced Any color is fine
  • 1 can diced tomatoes Preferably fire-roasted for depth
  • 1 cup corn Fresh or frozen
  • 1 can black beans, drained and rinsed For protein
  • 2 tablespoons taco seasoning Homemade or store-bought
  • 1 teaspoon cumin Adds warmth
  • Salt and pepper, to taste
  • Fresh cilantro, chopped For garnish
  • Avocado slices Optional: creamy contrast

Preparation

  • Heat a large skillet over medium heat. Add the diced onion and minced garlic, sautéing them for about 3 minutes until fragrant and translucent.
  • Increase the heat slightly and add the ground beef to the skillet. Break it apart with a spatula while it cooks. Stir frequently until it’s no longer pink, around 6-8 minutes.
  • Once browned, mix in the bell pepper, corn, diced tomatoes, black beans, taco seasoning, cumin, salt, and pepper. Stir to combine all ingredients well.
  • Allow the mixture to simmer for another 5 minutes to meld the flavors.
  • Remove from heat and garnish with fresh cilantro and avocado slices if desired.

Notes

Consider swapping ground beef for turkey or plant-based crumbles for a lighter option. Add more veggies like spinach or zucchini for extra nutrition. Always check seasoning before serving for the best flavor.
