Ingredients
  

Chicken and Marinade

  • 4 pieces boneless, skinless chicken breasts Can substitute with thighs for a richer taste
  • 1 cup buttermilk Dairy-free version: almond milk mixed with vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme Or your preferred herb
  • to taste Salt
  • to taste Pepper

Coating

  • ½ cup all-purpose flour
  • 1 teaspoon paprika

Cooking

  • 2 tablespoons olive oil Can use butter for richer flavor

Preparation

  • In a bowl, mix buttermilk, garlic powder, onion powder, thyme, salt, and pepper. Add the chicken and ensure each piece is well-coated. Let it marinate for at least 30 minutes or up to overnight.

Coating

  • In a separate bowl, combine flour, paprika, and a pinch of salt.

Cooking

  • Heat olive oil in a large skillet over medium heat.
  • Take each chicken breast from the marinade, allowing excess liquid to drip off, then coat it thoroughly in the flour mixture.
  • Place the coated chicken in the hot pan. Cook for about 6-7 minutes on each side, or until golden brown and the internal temperature reaches 165°F.
  • Once cooked, remove the chicken from the pan and let it rest for 5 minutes.

Notes

Consider adding cranberries or orange zest to the marinade for a seasonal twist. For a gluten-free option, swap out the flour for almond flour or breadcrumbs. Trying spices like cumin or Cajun seasoning adds a zesty kick.
