Ingredients
  

For the Mashed Potatoes

  • 2 pounds Yukon Gold potatoes Creamy and buttery, perfect for mashing.
  • 4 tablespoons olive oil For drizzling and adding flavor; can use garlic-infused oil.
  • 1 teaspoon salt Essential for flavor enhancement; adjust based on taste.
  • 1/2 teaspoon black pepper Freshly ground for best flavor.
  • 1/2 cup milk or almond milk Adds creaminess; choose your favorite type.
  • 1 teaspoon lemon juice Brightens the flavors.

For the Grilled Tomatoes

  • 1 pint cherry tomatoes When grilled, they burst with flavor and add sweetness.
  • 2 tablespoons olive oil For tossing and grilling.
  • 1 teaspoon salt Adjust to taste.
  • 1/2 teaspoon black pepper Freshly ground.

For Garnish

  • to taste Fresh basil or parsley Sprinkle to tie everything together.

Instructions
 

Preparation

  • Peel the Yukon Gold potatoes and cut them into quarters. Rinse under cold water to remove excess starch.
  • Place the potatoes in a large pot, cover with water, and add 1 teaspoon of salt. Bring to a boil over high heat, then reduce to medium heat and simmer for about 20 minutes, until fork-tender.
  • While the potatoes are boiling, preheat your grill or grill pan on medium-high heat. Toss the cherry tomatoes with 2 tablespoons of olive oil, salt, and pepper.
  • Grill the tomatoes for about 5-7 minutes until blistered and soft.

Mashing and Serving

  • Once the potatoes are cooked, drain them and return them to the pot. Add the remaining olive oil, milk (or almond milk), lemon juice, and the remaining salt and pepper. Mash until creamy and smooth.
  • Scoop the mashed potatoes onto a serving platter, top with the grilled tomatoes, and sprinkle with fresh herbs. Drizzle with more olive oil for a finish.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. To freeze, pack tightly in a freezer-safe container for up to 2 months.
