  • 3 large Eggs Flax eggs can be used for a vegan version.

Flavor Enhancers

  • 6 oz Bacon or Sausage Choose between crispy bacon or hearty sausage.
  • 2 cups Shredded Cheese A blend of cheddar and mozzarella melts beautifully.
  • 1/2 cup Maple Syrup Opt for pure maple syrup for the best flavor.

Optional Toppings

Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C).
  • In a skillet, cook the bacon or sausage over medium heat until crispy.
  • In a large bowl, combine the pancake mix, milk, and eggs until smooth.

Assembly

  • In a greased 9x13-inch baking dish, pour half of the batter and spread it evenly.
  • Layer the cooked bacon or sausage and shredded cheese on top.
  • Drizzle half of the maple syrup across the cheesy layer.
  • Pour the remaining batter over everything, ensuring it’s well-covered.

Baking

  • Place in the oven and bake for about 30 minutes until golden brown and a toothpick comes out clean.
  • Let it cool for a few minutes before serving and drizzle with the remaining syrup.

Notes

This casserole can be prepared ahead of time and stored. Reheat leftovers in the oven or microwave. Try adding sautéed veggies or use gluten-free pancake mix as variations.
