  • 1 pound ground beef (or turkey for a leaner option) Ground chicken or pork can also be used.
  • 8 slices cooked bacon, crumbled
  • 1 cup shredded cheddar cheese (or use mozzarella for a milder taste) Cheese varieties can be mixed and matched.
  • 4 large eggs
  • 1 cup heavy cream (can substitute with almond milk for a lighter option) Full-fat coconut milk can be used for a dairy-free version.
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon mustard (yellow or Dijon)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large skillet, heat over medium heat. Add the ground beef and cook until browned, about 5-7 minutes. Drain the excess fat and set the meat aside.
  • In a large mixing bowl, whisk together the eggs, heavy cream, Worcestershire sauce, mustard, garlic powder, onion powder, salt, and pepper.
  • To the egg mixture, add the browned meat and crumbled bacon. Fold in half of the shredded cheese until well combined.
  • Grease a 9×13 inch baking dish with cooking spray or butter. Pour the mixture into the dish and spread evenly. Top with the remaining cheese.

Baking

  • Bake in the preheated oven for about 30-35 minutes or until the edges are golden brown and the center is set.

Notes

This casserole is not just low in carbs but also rich in nutrients. Add a layer of spinach or kale for extra vitamins. For a vegetarian option, substitute the meat with cauliflower rice. Store leftovers in an airtight container for 3-4 days or freeze for longer storage.
