  • 1 pound ground beef (or turkey for a leaner option) Ground chicken or pork can also be used.
  • 8 slices cooked bacon, crumbled
  • 1 cup shredded cheddar cheese (or use mozzarella for a milder taste) Cheese varieties can be mixed and matched.
  • 4 large eggs
  • 1 cup heavy cream (can substitute with almond milk for a lighter option) Full-fat coconut milk can be used for a dairy-free version.
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon mustard (yellow or Dijon)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat over medium heat. Add the ground beef and cook until browned, about 5-7 minutes. Drain the excess fat and set the meat aside.
  3. In a large mixing bowl, whisk together the eggs, heavy cream, Worcestershire sauce, mustard, garlic powder, onion powder, salt, and pepper.
  4. To the egg mixture, add the browned meat and crumbled bacon. Fold in half of the shredded cheese until well combined.
  5. Grease a 9×13 inch baking dish with cooking spray or butter. Pour the mixture into the dish and spread evenly. Top with the remaining cheese.
Baking
  1. Bake in the preheated oven for about 30-35 minutes or until the edges are golden brown and the center is set.

Notes

This casserole is not just low in carbs but also rich in nutrients. Add a layer of spinach or kale for extra vitamins. For a vegetarian option, substitute the meat with cauliflower rice. Store leftovers in an airtight container for 3-4 days or freeze for longer storage.
