  • 2 cups cooked and shredded chicken Rotisserie chicken is a fantastic shortcut.
  • 1 can cream of chicken soup (10.5 oz) You can substitute with cream of mushroom soup.
  • 1/2 cup ranch dressing For a lighter version, opt for light ranch dressing.
  • 1 cup shredded cheddar cheese Feel free to swap with pepper jack for an extra kick.
  • 1 bag frozen tater tots (32 oz)
  • 1/2 cup chopped green onions Chives work beautifully here too.
  • Salt and pepper to taste

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large mixing bowl, combine the shredded chicken, cream of chicken soup, ranch dressing, and half of the shredded cheddar cheese. Season with salt and pepper to taste.
  • Spread the chicken mixture evenly into the bottom of a greased 9x13-inch casserole dish.
  • Top the chicken mixture with a single layer of frozen tater tots.
  • Pop the casserole in the preheated oven and bake for 25 minutes.
  • Sprinkle the remaining cheese on top and bake for another 15 minutes, or until the cheese is melted and bubbly, and the tater tots are golden brown.
  • Once baked, remove the casserole from the oven and sprinkle chopped green onions on top for a fresh finish.

Notes

Consider serving with a side salad or steamed vegetables. Add extra ranch dressing or hot sauce for a spicy kick. Store leftovers in an airtight container for up to 3 days.
