  • 2 cups Cheddar Cheese Sharp or mild for gooey, mouthwatering bites.
  • 1 cup Cooked Bacon or Sausage Choose your favorite—smoky or spicy.
  • 1 cup Bell Peppers, diced Add color and texture; can swap for spinach or mushrooms.
  • 1 cup Diced Onions Adds aromatic flavor to enhance each bite.
  • to taste Salt and Pepper Essential for seasoning your dish perfectly.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a skillet, cook the bacon or sausage over medium heat until crispy, about 5–7 minutes.
  • In a large bowl, whisk together the eggs and milk until frothy. Season with salt and pepper.
  • Add the diced potatoes, cooked meat, bell peppers, onions, and 1 cup of cheese to the egg mixture and stir until blended.
  • Grease a 9×13 inch baking dish and pour the mixture in, spreading it evenly with a spatula.
  • Sprinkle the remaining cheese over the top.

Cooking

  • Bake the casserole for 40–45 minutes, or until the egg is set and the top is golden brown.
  • Let cool for a few minutes before slicing and serving.

Notes

For added flavor, try adding tomatoes, jalapeños, or herbs. You can also customize the dish with seasonal vegetables.
