Ingredients
  

For the Vinaigrette

  • 1/4 cup fresh lemon juice For that bright, zesty flavor. Substitute lime juice if out of lemons.
  • 1/2 cup extra-virgin olive oil Use high-quality oil for richness. Avocado oil can be used as an alternative.
  • 1 tsp Dijon mustard Adds depth. Skip or use yellow mustard for a milder taste.
  • 1 clove garlic, minced Fresh garlic imparts a wonderful depth; garlic powder can be a substitute.
  • to taste Salt and pepper Essential for enhancing all the flavors.

Preparation

  • Juice the lemons until you have about 1/4 cup of juice.
  • In a medium bowl, combine the lemon juice, minced garlic, and Dijon mustard. Whisk until fully incorporated.
  • Gradually drizzle in the olive oil while continuously whisking until the mixture emulsifies.
  • Taste and add salt and pepper to your preference.
  • Pour the vinaigrette into a jar or airtight container. Store in the fridge for up to a week.

Notes

For added flavor, toss in fresh chopped herbs like basil, parsley, or thyme. A teaspoon of honey or maple syrup can add sweetness. For a creamier version, add Greek yogurt or buttermilk.
