Preparation

  • Squeeze the juice from fresh lemons into a measuring cup, aiming for about 1/4 cup.
  • In a medium bowl, combine the lemon juice, Dijon mustard, and honey (if using). Whisk until well mixed.
  • While whisking constantly, slowly drizzle in the olive oil to emulsify the dressing.
  • Add salt and freshly ground black pepper to taste.
  • If including garlic, stir in the minced clove and whisk again.
  • Taste the dressing and adjust flavors as needed.
  • Transfer the dressing to a jar and store in the fridge if not used immediately.

Notes

For a gluten-free version, choose mustard without added preservatives. Substitute honey with agave for a sugar-free option. Can add finely chopped fresh herbs for flavor enhancement.
