  • 1/2 cup breadcrumbs Can substitute with gluten-free breadcrumbs
  • 1/4 cup grated Parmesan cheese Optional for dairy-free version
  • 1 piece egg Binders the mixture
  • 2 cloves garlic, minced Use fresh for best flavor
  • 1 tbsp lemon zest, freshly grated Enhances flavor significantly
  • 1 tsp black pepper Adjust to taste
  • 1/2 tsp salt To taste
  • 2 tbsp olive oil For cooking

Preparation

  • In a large bowl, combine ground chicken, breadcrumbs, Parmesan cheese, egg, minced garlic, lemon zest, black pepper, and salt. Mix until well combined but avoid overmixing.
  • Shape the mixture into small meatballs, about 1 to 1.5 inches in diameter.

Cooking

  • Heat olive oil in a large skillet over medium heat.
  • Add meatballs in a single layer and cook for 10–12 minutes, turning often, until golden brown and cooked through (internal temp: 165°F/74°C).

Serving

  • Serve hot with pasta, over a salad, in wraps, or as a standalone main with a veggie side.

Notes

Don't overmix the ingredients. Use fresh ingredients for better flavor. Adjust seasoning to your taste. These meatballs can be frozen for up to 3 months.
